Ingredients
Cheesecake
6oz infused sugar cookie dough
16 oz cream cheese
1/2 cup sour cream
2 tbsp cornstarch
2 cups white chocolate chips melted
2 9’’ Graham cracker pie crust pan
White Chocolate Mousse
1 cup of heavy whipping cream
2 oz of cream cheese
3 oz of white chocolate chips melted
2 oz infused sugar cookie dough

Recipe
Preheat oven to 300°F.
In the mixer while the dough is still chilled, weigh out and crumble into pieces 12oz of dough to allow the stand mixer to properly homogenize additional ingredients.
In the mixer with dough, combine 12 oz of cream cheese, sour cream, melted white chocolate and cornstarch and whip until smooth.
Pour mixer contents into your graham cracker crust pan
Bake for 1 hour on center rack.
Turn oven off and leave oven door half open. Let cheesecake sit in oven for an additional hour befor placing in the fridge to chll for 4 hours(best overnight)
In a bowl mix remaining cream cheese melted chocolate chips and 4oz of cookie dough and set aside.
In a chilled mixing bowl whip heavy cream until stiff peaks begin to form, fold in your chocolate cream cheese mixture until blended.
Top chilled cheesecake with whipped cream mixture and serve.
